baked eggs

this recipe serves one, because i only have one small ramekin. i don't know if you could scale this up to a larger ramekin. definitely to many small ramekins, though.

  1. preheat oven to 325°.
  2. grease a ramekin (butter is definitely your friend here. cooking spray will do, but not as well).
  3. line the bottom of the ramekin with cheese.
  4. add eggs over the cheese.
  5. sprinkle with salt/pepper, whatever else you like.
  6. add more cheese on top.
  7. bake for 18-22 minutes. i like a gooey egg but if you like a solid egg, bump the temperature up a little.
