this recipe serves one, because i only have one small ramekin. i don't know if you could scale this up to a larger ramekin. definitely to many small ramekins, though.
ingredients
- 2 eggs
- cheese, grated and/or sliced (i like cheddar or swiss for this one)
- herbs and/or spices, to taste (salt and pepper at the very least, but you can add whatever)
instructions
- preheat oven to 325°.
- grease a ramekin (butter is definitely your friend here. cooking spray will do, but not as well).
- line the bottom of the ramekin with cheese.
- add eggs over the cheese.
- sprinkle with salt/pepper, whatever else you like.
- add more cheese on top.
- bake for 18-22 minutes. i like a gooey egg but if you like a solid egg, bump the temperature up a little.
notes
- i like cheddar or swiss cheese for this one.
- sliced cheese works best for lining the ramekin, grated cheese works best for the tops.
- try not to break the yolks, and do NOT stir this at all after you add the spices. trust me.
- you can add whatever herbs/spices you like. think about what combinations you like together and add those. it will probably work here. also hot sauce on top is good. probably other things.
